Rotel Chicken

This is a very easy go to recipe and reheats very well to eat throughout the week.  

Ingredients

16 oz boneless skinless chicken breast
2 cans Rotel
1 cup uncooked brown rice
cooking spray

Directions
Cook brown rice per package directions.
Butterfly chicken breasts and cut into cubes, place large skillet on medium high heat and spray with cooking spray.  Cook chicken until SLIGHTLY undercooked and add Rotel.  Let simmer, uncovered until most of the liquid is cooked off and chicken is cooked throughly. 
Serve Rotel chicken over brown rice.
