Breakfast muffin


Who loves a good breakfast muffin from your local diner or shall I say it, fast food dealer in town?? 
Well, matter of fact is, they are good, they taste good, but we don't always know where the ingredients came from and the meat is sometimes deep fried.
This is my take on the morning muffin and I am quite pleased with it! 

One English muffin, I use whole wheat.
One TBSP salsa on each muffin.
One slice of cheese on each muffin.
One fried egg on top.
Spices or pepper to your taste. Old bay is great!! 

BAM, there you have it! Starch, protien and a few veggies in the salsa! A well balanced breakfast that holds me till my mid-morning snack of Shakeology!!

This has the ability to be 21 day fix approved with one tweek. I would use one slice of cheese and split it between both muffins.

1 Purple 
(store bought salsa is a purple b/c of the sugars)
1 Blue

A day in the life of a Fix Extremer..

I have been wanting to share what a day looks like while completing the 21 day fix extreme.  To prepare, I took snapshots of everything I ate and took some raw footage of my double workout that I completed that day!! Now, I will say that I am in the highest calorie bracket of the program and I am following the 21 day fix nutrition guide with 21 day fix extreme workouts.  
I hope this gives you all a peek into what a day full of nutritious foods can look like and how much I actually eat in a day to not only FUEL my body for the workouts I complete but lose weight in the process!!

Breakfast...my favorite meal of the day.  I had Bulgar wheat with 1 TBSP coconut oil, 2 egg muffins and strawberries. Talk about filling! It was delicious, nutritious and a great way to start my day!
This particular day I was able to workout in the AM, I set out to do a double workout including Pilates extreme and Upper fix Extreme.  It was intense, but fun and SOOO worth it! I then set out for a walk and attempted jog. The walk was great, the jog, not horrible, but I can't do long at all because of a diagnosis of compartment syndrome in both lower extremities.  Foot drop kicks in and I just have to rest.  Anyway, this is why I LOVE Beachbody workouts, I get a killer workout and no pain!!! I could not upload the video, I will con't to work on that.....moving on.

My second favorite meal....Shakeology of course! Today was Sweet Indulgence.  Recipe here! 





Lunch was a salad with Tofu and balsamic vinaigrette  dressing and baked sweet potato fries.   My afternoon snack was the BANGIN combo of veggies and hummus. I love hummus, any kind, I could eat it with a spoon. SO...this little blue container gets used a lot. I NEED portion control for my hummus.

Now, dinners in our household are cooked by my husband. He is a better cook and he found out quickly that I realistically could eat chicken every night and be fine with that, he prefers variety.  This particular evening, we had pork chops and saute zucchini.

There you have it.  This is a very basic day for ME, as far as nutrition goes while doing the 21 day fix nutrition plan.  These foods are foods that I incorporate a lot into my weekly meal plans. oh yeah...wanna see my full meal plan?

Written this particular week, sometimes I get fancy and type it, no such luck last week.

Banana pancakes

This may be the most simple, delicious "pancake" ever!! 
Easy
Simple
Quick
Those are three words I love! Let me know how you like them

Ingredients
1 somewhat ripe banana
2 eggs
1 tsp vanilla extract
1 tsp cinnamon

Mash banana in medium bowl, add eggs, beat eggs and mix together. Add cinnamon and vanilla, mix.  Pour into pan in small pancakes, this makes it easier to flip! 

Enjoy with a little honey on top!

Clean Spanish Tortilla


Ingredients:
12 eggs, well beaten
1 lb cooked sausage, sliced (We used all natural chicken sausages-Italian seasoned)
1/2 lb sweet potatoes, sliced and cooked to fork tender
1 medium onion, roughly chopped
2 TBSP EVOO




Directions:
Preheat oven to 350
In a large, oven safe skillet, saute onion in EVOO over medium heat
When onions begin to brown, add sweet potatoes
Continue to cook onions and potatoes until potatoes begin to get brown and crispy, add cooked sausage.

Add eggs to mixture - do not scramble eggs!
Use a spatula to pull the cooked egg from the side of the pan
Tilt the pan so the uncooked egg liquid fills where the eggs were just pulled back from the sides, as if making an omelet.
When as much of the liquid eggs have been moved to the sides, place in oven and cook for 10-15 minutes, or until the top of the tortilla is firm and no eggs are left uncooked.
Remove from the oven and let stand for 5 minutes before slicing.



This recipe is so versatile. Experiment with different types of sausages, spices and always let me know how things turn out!! Enjoy!

Fluffy eggs

Ingredients

3 eggs(or however many you like)
1/2 cup cottage cheese
pepper to taste

Spray your pan with coconut oil over medium heat, crack eggs into pan and place cottage cheese on top.

Scramble eggs and cheese like normal and you will have the most amazing, FLUFFY, cheesy eggs you have ever eaten!! Enjoy!
