This is a staple in our house. I always have it on hand to mix with yogurt, fruit or just eat as a snack! It keeps well in an air-tight container. Enjoy!!
3.5 C rolled oats
1/2 C chopped almonds
1/3 C extra virgin olive oil
1/2 C honey
1.5 tsp cinnamon
1/4 tsp ground ginger
1 tsp vanilla
2 C craisins
1. Pre-heat oven to 350 degrees.
2. Add all ingredients into one bowl EXCEPT craisins.
3. Mix until oats and almonds are coated.
4. Place on well greased pan.
5. Bake for 18-20 minutes, stirring halfway through (the cook times may vary depending on your oven!)
6. Remove from oven and place hot granola into container to cool.
7. Add craisins to hot granola, stir and let cool in container prior to placing lid.
