Banana pancakes

This may be the most simple, delicious "pancake" ever!! 
Easy
Simple
Quick
Those are three words I love! Let me know how you like them

Ingredients
1 somewhat ripe banana
2 eggs
1 tsp vanilla extract
1 tsp cinnamon

Mash banana in medium bowl, add eggs, beat eggs and mix together. Add cinnamon and vanilla, mix.  Pour into pan in small pancakes, this makes it easier to flip! 

Enjoy with a little honey on top!

Peanut butter and oats

I never liked Oatmeal. I thought it was slop and that it did NOT look appetizing.  As I became aware of the benefits and the healthy factor, I began to experiment.  This is a morning favorite in our house, for me AND my husband! This recipe makes ONE serving.

Ingredients
1/4 cup quick oats
1/2 cup water
3 tsp all natural nut butter (peanut, almond, cashew)
1 banana

Directions
Cook oats in water in microwave 2-3 min. Top with peanut butter and cut bananas and ENJOY!  

***ALSO 21 Day Fix approved! 1 yellow, 2 purple, 3 tsp.

Cottage English muffins

This "recipe" comes from my childhood.  My mom would make these for my sister and I and we liked them! Little did I know they were healthy and good for me! 


Preheat oven to 350 degrees.  Take English muffin, halve it and place on cookie sheet. Add cottage cheese and sprinkle with wheat germ.  Place in oven and cook until the English muffin is golden brown on the edges.  

Add a banana for an instant SMILE!!!

Shamrock Shakeo

St Patty's Day is in the air...what does that mean to you?
To many people...it is Shamrock shake time!

Since going clean, it's hard to drink THAT green, so I cleaned it up today and had a Shamrock Shakeo!!

Ingredients: 
1 scoop Greenberry Shakeology
1 TBSP PB2
2 TBSP vanilla pudding powder
1/8 tsp mint extract
8 oz unsweetened almond milk
ice to preference

Blend in blender and enjoy!

Chocolate covered cherry Shakeology

*1 scoop chocolate shakeology
*1/2 cup frozen cherries
*8 oz almond milk
* ice--thin consistency=less ice, thicker consistency=more ice

Blend in a blender and ENJOY!!

Clean Granola

This is a staple in our house.  I always have it on hand to mix with yogurt, fruit or just eat as a snack! It keeps well in an air-tight container. Enjoy!!

3.5 C rolled oats
1/2 C chopped almonds
1/3 C extra virgin olive oil
1/2 C honey
1.5 tsp cinnamon
1/4 tsp ground ginger
1 tsp vanilla
2 C craisins

1. Pre-heat oven to 350 degrees.
2. Add all ingredients into one bowl EXCEPT craisins.
3. Mix until oats and almonds are coated.
4. Place on well greased pan.
5. Bake for 18-20 minutes, stirring halfway through (the cook times may vary depending on your oven!)
6. Remove from oven and place hot granola into container to cool.
7. Add craisins to hot granola, stir and let cool in container prior to placing lid.
