Savory breakfast quinoa

It is no secret that breakfast is my favorite meal.  I also love salt, carbs and nuts of any kind, who doesn't?   I thought this up and it is absolutely amazing! AND 21 day fix approved!!

Ingredients:
Quinoa
Pinch of pink Himalayan salt
2 tsp Coconut oil
1 TBSP Chopped pecans


21 day fix, 3 day quick fix, beachbody, weight loss, clean eating, erinn leibCook Quinoa according to directions on package.  For the 21 day fixers, I use one yellow container of quinoa and add the rest of the fixins and there you have it, a breakfast that feels like a cheat, a sweet/salty cheat! ENJOY!

Peanut Tofu

We simply took our peanut chicken recipe and paired it with tofu and it turned out great!!

Ingredients:
2 packages of Tofu (we like firm tofu best)

Sauce Ingredients:
3TBSP  peanut butter
2TBSP lime juice
1TBSP  light soy sauce
1TBSP honey
1TBSP Sriracha


Directions:
Cut up two packs of tofu. Drain and dry and place on baking sheet and place in oven at 350 degrees for 25 min, stirring at 15 min.  As this cooks, mix your sauce. When tofu is baked to desired texture, take out of oven and mix in with sauce.  We enjoy it over quinoa or brown rice and most times we add some steamed broccoli!

Quinoa Fruit Salad

       My husband and I make many side dishes with Quinoa as the main ingredient.  This is one of my all time favorites! It is great to take to a picnic and also holds up very well for a few days.  The strawberry color may "bleed" but it continues to taste amazing. Enjoy!

Ingredients

1 cup Quinoa
2 cups water
1 quart blueberries
2 cups strawberries, diced
2 kiwis, diced

Honey-Lime dressing
2 TBSP honey
2 TBSP apple cider vinegar
1/4 cup sunflower oil
1 TBSP lime juice
1/4 tsp dry mustard

Directions

Place Quinoa and water in pot, bring to a boil, cover and reduce to simmer and let cook 15 minutes or until all the water is absorbed.  Allow to cool in large bowl.
Add fruit to Quinoa and stir.
Combine dressing ingredients in medium bowl and use wisk to combine.
Pour dressing over Quinoa/fruit mixture and serve.

Black bean corn quinoa

My husband and I love quinoa and are constantly looking for new ways to eat it. This is an original recipe from my husband and feel free to adjust spices to your taste! Enjoy as a main dish or a side dish to your main course.  This is also a dish that can be enjoyed over a few days as the flavors continue to blend.

Salad:
1 Cup uncooked quinoa
1 can black beans, rinsed
12 oz frozen corn
1/2 cup chopped cilantro

Dressing:
1 TBSP dijon mustard
1TBSP lime juice
1 TBSP EVOO
1/4 cup rice vinegar
1/2 TSP cumin
1/2 TSP garlic powder
1/2 TSP onion powder

Cook quinoa as per package directions. Transfer to extra large mixing bowl.  Add black beans, corn and chopped cilantro, mix.  In medium mixing bowl, mix dressing ingredients and wisk until blended.  Pour dressing mixture over salad and stir.
